Banana Yoghurt Muffins

what you need

1 cup almond meal
3/4 cup coconut flour
1/2 cup coconut sugar
1/2 cup walnuts, roughly shopped
5 medjool dates, roughly chopped
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup coconut yoghurt ( I used Coyo Probiotic Natural Yoghurt)
2 ripe bananas
1 large egg
1/4 cup coconut oil

what to do 

Preheat oven to 180°C. Grease muffin tray.

Mix together all dry ingredients, including dates, in a large bowl.

Add coconut yoghurt, bananas, egg and coconut oil to high speed food processor or blender. Blend together at high speed until well combined. About 20-30 seconds.

Pour the wet mixture over the dry mixture. Gently fold until just combined.

Spoon into muffin tray and place in oven. Bake for 35 – 40 mins or until skewer comes out clean. Remove from oven and allow to cool in tray for 10 mins. Remove from tray and cool on wire rack.

Can be stored in refrigerator.

Makes 12 muffins.
