Chocolate, Orange and Cranberry Lunchbox Bars

These quick, easy and nutritious bars are an ideal lunchbox treat for adults and kids alike. They require no baking and are deliciously chew and chocolaty with a burst of sweetness from the cranberries.
Makes 12 large bars

what you need

2 1/2 cups desiccated coconut
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/3 cup hemp seeds
1/3 cup cacao or carob powder
1 ½ tsp vanilla extract
12 medjool dates or 1 cup Iranian dates (softened in boiling water for 10 mins)
3 Tbs tahini
1 Tbs coconut oil, melted
2 Tbs freshly squeezed orange juice
Grated rind of one orange
½ cup dried cranberries
50 grams dark chocolate (to drizzle)

what to do

Place all ingredients except for the cranberries and dark chocolate into a food processor and blend until smooth.
Stir through the cranberries until well combined.
Grease a 20cm baking tin with greaseproof paper and butter/oil.
Place chocolate in a bowl and melt over a saucepan of water stirring constantly.
Drizzle dark chocolate over the slice then place in fridge overnight.
Remove and slice into individual bars. Each bar can be wrapped in greaseproof paper ready for lunchboxes.
