Apples help support gut health, while blueberries are rich in antioxidants that support healthy ageing and overall wellness. With warming cinnamon, juicy fruit and a crunchy oat topping, it’s delicious served warm with Greek or coconut yoghurt.
what you need
Filling:
- 4 apples, sliced
- 1 cup blueberries
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 tbsp maple syrup or honey (optional)
- Squeeze of lemon juice
Crumble Topping:
- 1 cup rolled oats
- ½ cup almond meal
- ½ cup desiccated coconut
- ¼ cup chopped walnuts or pecans
- 3 tbsp coconut oil or butter
- 2 tbsp maple syrup or honey
- Extra cinnamon
what to do
- Preheat oven to 180°C.
- Add apples and blueberries to a saucepan with cinnamon, vanilla and lemon juice. Add about 2-3 Tbs water and bring to a slow simmer. Simmer for 5 minutes until fruit is slightly softened. Be careful not to over mix fruit so it keeps its shape.
- Pour fruit mixture into a greased baking dish.
- Mix crumble ingredients together in a bowl until combined.
- Sprinkle topping over fruit.
- Bake for 30–35 minutes until golden and bubbling.
- Serve warm with a dollop of Greek or Coconut Yoghurt.
