what you need
1 large or 2 small mangoes, diced into 1.5cm pieces
1 large avocado, diced into 1.5cm pieces
¼ small red onion, very finely chopped
1 red chilli, seeds removed and finely chopped
½ cup mint leaves, roughly chopped
¼ cup coriander leaves, roughly chopped
2.5-3cm knob of ginger, peeled and finely grated
Juice of 1 large lime
1 tbsp olive oil
pinch good quality sea salt
what to do
Combine all ingredients into a bowl and gently stir to combine.
Can be served with tortilla chips as a dip; as a side for bbq steak or chicken or a very tasty addition to your next veggie bowl.
