lupin, haloumi and sweet potato burgers

“try these for a new twist on sliders for your next party”

Makes about 24 small cakes

what you need:

1 ¼ cup (150g) lupin Flakes
125g  haloumi sheep milk cheese, grated
30g   nutritional yeast
250g  sweet potato, grated
½  large onion,finely diced
1  fresh corn cob, corn removed from cob
30g  coconut flour
1  egg, lightly beaten
3  garlic cloves, crushed
4 tbsp (60 ml)  chicken stock
2 tbsp (25 ml)  oil of choice
salt and pepper to taste
handful of parsley

what to do:

Preheat oven to 180 degrees Celsius.

Mix all ingredients until well combined. Let stand for 5 minutes.

Once rested, with moist hands, form the mixture into burgers of desired size. We recommend making the burgers as thin as possible to allow for even cooking.

Place burgers in a baking paper lined tray. Bake in the oven for about 25 to 30 mins.

Serve with avocado, apple, baby spinach and your favourite sauerkraut on a paleo slider bun. Or on their own with a roast vegetable salad and a dollop of garlic aoli!
