zucchini fritters with za’atar

za’atar is a middle eastern spice blend that takes these very easy zucchini fritters to another level! Great for dinner and even better in your lunchtime wrap the next day…….

 what you need

2  large zucchini, grated
1 tsp sea salt
1/4 cup coconut flour
2 eggs, lightly beaten
1/2 tbsp za’atar ( I used Herbies Spices)
cracked black pepper, to taste
coconut oil, for cooking

what you need

Place the grated zucchini in a large bowl. Sprinkle with the salt and toss well. Leave for about 15-20 mins to allow moisture to be taken out of the zucchini.  Rinse thoroughly under water to ensure salt is removed.

Squeeze the moisture out of the zucchini. Take a handful of zucchini and squeeze out the water as much as you are able. Place into another bowl. Continue this process.

Add the coconut flour, eggs, za’atar and black pepper. Stir to combine.

Heat a large fry pan over medium-low heat. Add a dessertspoon full of coconut oil to the pan. Using Using a 1/4 cup, fill with zucchini mixture and then turn out into the fry pan. Add about 4 fritters to the pan at a time.

Cook each side for 3 to 4 minutes or until browned. Continue until all mixture is used. If required, add more coconut oil to the fry pan before starting a new batch.

Serve with a fresh green salad and a side of garlic aoili. Or use as a filling in your sandwich or wrap for lunch the next day!
