Organic Turmeric Bircher

turmeric overnight oats with raw honey & berries

‘Even in the warmer weather, you can enjoy the comfort of oats’

A cold bircher is a great way to enjoy all the nutrients oats offers. The addition of turmeric, mushroom powder, raw honey and wild berries turns this humble breakfast into a superfood star.

what you need

½ cup oats
1 tbsp chia seeds
1 tbsp nut butter of choice (I used Barenuts Macadamia Nut Butter)
2 tsp Teelixir Turmeric Latte with Cordyceps
1 tbsp raw honey
½ small ripe banana, mashed
100 ml coconut milk
100ml water
2 tbsp coconut yoghurt

suggested toppings

1 cup frozen wild berries
½ cup coconut chips
Nut butter of choice

what to do

Place all the ingredients except the toppings into a large bowl. Mix together until fully combined. Cover and place in the fridge overnight.

Next morning, place the frozen berries into a saucepan and gently heat at a medium low temperature until the berries have softened and start to break down.

At the same time, dry roast the coconut chips on a small clean frypan at a medium temperature until golden brown.

Remove the bircher from the fridge. Stir and then serve into 2 bowls.

Top the bircher with the berries, coconut chips and a dollop of nut butter. You can add coconut yoghurt, as well if preferred.

notes

The bircher muesli can also be serve heated. Place in a saucepan and slowly heat at a medium temperature, stirring occassionally to stop sticking to the bottom of the saucepan.
