Pomegranates contain nutrient rich jewel-like seeds known as arils. Bursting with flavour, these seeds are full of antioxidants and vitamin C.
what you need
1 1/2 cups raw cashew nuts
1/2 cup desiccated coconut
1/2 cup Morlife 100% Freeze-Dried Pomegranate Arils
1/3 cup extra virgin coconut oil, melted
2 tbsp raw honey (or sweetener of your choice)
1 tbsp hydrolysed collagen, optional
Pinch of sea salt
what to do
Line a 23cm x 13cm tray with baking paper.
Process the cashew nuts and coconut in a food processor until you get fine crumbs. Transfer to a bowl and stir through the pomegranate arils, sea salt, melted coconut oil, honey and collagen until well combined.
Press the mixture into the prepared container and leave in the freezer for a few hours until set. Once set remove from the container and cut into desired pieces.
Needs to be stored in the fridge or freezer.
