what you need
7 medjool dates, seeds removed
30g dried mango
30g Morlife Collagen Pantry Beauty Greens – Juicy Mango
1/2 cup dessicated coconut
1 cup macadamia nuts
1 tsp vanilla paste
1/2 tbsp coconut oil
1/2 cup shredded coconut (optional)
what to do
Add macadamia nuts and coconut to a high speed food processor. Process until a rough meal texture.
Add the remaining ingredients and process until well combined.
Brown the shredded coconut in a frypan over medium-low heat. Keep coconut moving in pan until slightly browned. You will need to keep an eye on the coconut whilst cooking as will brown very quickly.
Roll the mix into preferred size balls and roll in the browned shredded coconut. Place on a lined tray or container and place in the refrigerator until ready to serve.
For a slightly different flavour, you could roast the macadamia nuts beforehand. Allow to cool before using in the recipe.
Make about 12 balls.
