lupin, cinnamon and coconut granola

“sprinkle on your coconut yoghurt or your smoothie bowl”

what you need

1 cup  lupin flakes
1 cup  puffed quinoa
½ cup  shredded coconut
¼ cup  pepitas
¼ cup  sunflower seeds
4 tsp  ground cinnamon
¼ cup raw honey or rice malt syrup
3 tbsp coconut oil
¼ cup goji berries

what to do

Preheat oven to 160°C.

In a bowl, toss all the ingredients together until they are well mixed and evenly coated. Transfer the mix to a baking tray lined with baking paper.

Roast, tossing occasionally, until golden brown.  Depending on oven allow 15 – 20 minutes baking time.

Leave granola to rest on the baking tray while it cools, this will allow it to dry out and crisp up.

Once cool, add raw goji berries and mix to combine.

Store in an airtight container in a cool, dry place.
