fruit salad with a touch of savoury

“a sweeter side salad for a summer bbq”

 what you need

1 mango, peeled & chopped
1/2 cup pineapple, peeled & chopped
1/2 cup blueberries
1/2 cup red pawpaw, peeled & chopped
1 orange, peeled & chopped
1 red grapefruit, peeled & chopped
2 kiwifruit, peeled & chopped
handful mint, roughly chopped
1 lime, juiced
2 tbsp honey
2 cups rocket
1 cup roasted macadamias, chopped
50g goats cheese (or more, if preferred)

 what to do

Gently combine all fruit and mint in a large bowl.  Add honey and lime juice to the fruit. Give another gentle stir and then cover and place into the fridge to sit for 10 – 15 minutes.

Create a bed of rocket on a tray and pour the fruit salad over the top.

Sprinkle with goat’s cheese and roasted macadamias and then serve, immediately.


Replace rocket with baby spinach or a mix of both
Replace goats cheese, blue cheese, fetta or, for a vegan option, dollops of cashew cheese.
