dark chocolate quinoa balls

what you need

40g activated pumpkin seeds
1 cup cooked quinoa (fully cooled)
60g cashews
5 medjool dates, pitted
1/2 tsp cinnamon
pinch good quality sea salt
1 tsp vanilla paste
1 tbsp coconut oil
100g raw dark chocolate
extra, 40g  hemp seeds and 40g activated pumpkin seeds

what to do

Place the pumpkin seeds, cooled quinoa, dates and cashews into a high speed food processor and process until finely chopped. Add cinnamon, sea salt, vanilla paste and coconut oil and mix until combined.

Roll into evenly shaped balls and place on a tray. The mixture makes about 18 small balls. Refrigerate for approximately 15 mins.

Place the 40g extra pumpkin seeds into food processor and process until very finely chopped. Place in a small bowl. Place the hemp seeds in another small bowl.

Melt the dark chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat.

Remove the balls from the fridge. Very quickly, roll each ball in the melted chocolate and then in, either the chopped pumpkin seeds or hemp seeds.

Refrigerate the balls again. Once set, place balls into a container and keep in the fridge.
