Christmas Buckini Balls

“Choose your favourite buckini mix found in our store bulk bins to make these delicious balls, the perfect guilt free treat for the festive season. If you can’t decide which flavour to use, just try all three…..you won’t be disappointed!! Yum!”

chocolate peppermint buckini truffles

Makes 15 – 18 balls

what you need

1 cup Loving Earth Chocolate Buckinis
4 medjool dates
100g + 1/2 cup macadamias
1 tbsp coconut oil
1/2 tsp vanilla paste
3-5 drops peppermint essence, to taste
60g 85% raw dark chocolate

what to do

Place dates in a small bowl and cover with water. Soak for 10 mins. Drain and set aside.

Add 100g macadamias to food processor and process on a high speed until a fine meal powder. Remove from food processor. Due to the high oil content in the macadamias, they may turn to a “butter” whilst processing. This will be fine.

Add to the food processor, dates and 1/2 cup macadamias. Process until roughly chopped.

Then add the remaining ingredients, except for the dark chocolate, to the food processor. Process until well combined and sticky but still has some crunchy bits.

Grate the dark chocolate into a small bowl.

Roll the buckini mixture into your preferred size ball and then roll in the grated chocolate. Place on a lined tray.

When complete, place the balls in the refrigerator to set before serving.

rose & citrus buckini balls

Makes 15 – 18 balls

what you need

1 cup Food to Nourish Breakfast Clusters – Rose, Pistachio & Orange
4 medjool dates
100g + 1/2 cup cashews
1 tbsp coconut oil
1/2 tsp vanilla paste
2 tsp lime juice
zest of 1 lime
1 cup desiccated coconut

what to do

Place dates in a small bowl and cover with water. Soak for 10 mins. Drain and set aside.

Add 100g cashews to food processor and process on a high speed until a fine meal powder. Remove from food processor.

Add to the food processor, dates and 1/2 cup cashews. Process until roughly chopped.

Then add the remaining ingredients, except for the desiccated coconut, to the food processor. Process until well combined and sticky but still has some crunchy bits

Place the coconut into a small bowl.

Roll the buckini mixture into your preferred size ball and then roll in the coconut. Place on a lined tray.

When complete, place the balls in the refrigerator to set before serving.

hibiscus & almond buckini balls

Makes 15 – 18 balls

what you need

1 cup Food to Nourish Breakfast Clusters – Hibiscus, Lemon & Blueberry
4 medjool dates
100g + 30g almond meal
1/2 cup almonds
1 tbsp coconut oil
1/2 tsp vanilla paste
2 tsp lemon juice
zest of 1/2 small lemon

what to do

Place dates in a small bowl and cover with water. Soak for 10 mins. Drain and set aside.

Add to the food processor, dates and 1/2 cup almonds. Process until roughly chopped.

Then add the remaining ingredients, except 30g almond meal, to the food processor. Process until well combined and sticky but still has some crunchy bits.

Place the 30g almond meal into a small bowl.

Roll the buckini mixture into your preferred size ball and then lightly roll in the almond meal. Place on a lined tray.

When complete, place the balls in the refrigerator to set before serving.

Enjoy and try not to eat all at once!
