Choc Peanut Butter Biscuits

what you need

1/2 cup cashews
1 1/2 cup oat flour
2 eggs
1 cup Proganics Powdered Peanut Butter – Choc PB Flavour
1/4 cup water
1/2 cup coconut sugar
1 tsp baking powder
1 tsp vanilla extract

what to do

Preheat oven to 175°C. Line a tray with baking paper.

Place cashews into a high speed food processor and process until a fine powder. You can do this with the rolled oats also if you do not have oat flour.

Combine all ingredients in a mixing bowl.

Roll tablespoon of mixture into a ball and place onto lined tray.  Flatten balls of dough with a fork.

Place in oven and bake for 18 – 20 minutes (biscuits do not need to brown). Let cool entirely before eating.

Makes about 18-20 biscuits


If you do not have access to powdered peanut butter, remove 1/4 cup water and replace with one cup peanut butter and 1/4 cup cacao.
