what you need
2 cups activated walnuts, roughly chopped
1 cup The Carob Kitchen raw carob powder
¼ cup coconut butter
½ cup coconut oil
1½ cups desiccated coconut
1 tbsp raw honey
½ cup tahini
1 cup goji berries
¼ tsp vanilla extract
1 tsp good quality sea salt
extra coconut for garnish
what to do
Line a slice tray with baking paper.
Place the carob powder, coconut butter, coconut oil, desiccated coconut, raw honey, tahini, vanilla and salt into a food processor. Blend until thoroughly mixed.
Add the mixture to a large bowl. Add walnuts and goji berries to the bowl and mix through.
Press mixture into the slice tray. Sprinkle with a little coconut. Then place in the freezer until it is set.
Once set, cut into squares and serve. You will not be able to stop at one!
Replace the walnuts with any mixture of nuts that you enjoy.
You can replace the coconut butter with almond butter.
