supercharged granola with medicinal mushrooms

Packed with healthy fats, plant-based proteins and medicinal mushrooms, this granola will kickstart your brain and body to keep powering throughout the day….

what you need

1/2 cup pumpkin seeds
3/4 cup cashews
9 medjool dates (seeds removed)
1/2 cup goji berries
1 tsp vanilla extract
1/2 tsp cinnamon
1 tbsp hemp protein
3 tsp Teelixir medicinal mushroom powder (I used a mix of Lion’s Mane and Reishi)
1 tsp maca
1/4 cup pecans
1/4 cup macadamias
1/3 cup coconut chips
1 tbsp chia seeds
1 tbsp cacao nibs
1 tbsp hemp seeds
1/4 tsp salt
1 tbsp coconut oil
2 tbsp nut butter (I used a coconut cashew butter)
1/4 cup dried cranberries

what to do

Preheat oven to 160°C fan forced or 180°C conventional. Line a baking tray with baking paper.

In a food processor or high speed blender, combine pumpkin seeds and cashews until a very coarse meal texture. Add the dates, goji berries, pecans, macadamias, vanilla extract, cinnamon, hemp protein, mushroom powder, and maca powder. Process quickly until the mixture has mostly formed into smaller pieces. You still want to have some chunky bits throughout the mixture.

Add the cacao nibs, coconut chips, chia seeds, hemp seeds, salt, coconut oil, and nut butter. Process briefly to mix through the ingredients.

Layer the mix over the lined baking tray and place into the oven. Bake for approximately 20 – 24 mins or until the nuts and coconut are light golden brown. Mix the granola one or two times throughout the baking time to brown evenly.

Remove from oven and sprinkle the dried cranberries over the granola. Allow to cool on tray before storing in a glass jar in the fridge.

Can be served with your favourite coconut yoghurt or just eaten on its own. Be careful it is very moreish!!!
