sesame & coconut protein bar

“ a great post workout recovery snack or breakfast on-the-go”

what you need:
2 cups black sesame seeds (pre-soaked for around 20-30 minutes)
½ cup dried organic apricots
½ cup dried organic inca berries
½ cup shredded coconut
½ cup hemp protein
½ cup tahini
¼ cup coconut oil, melted
1 tbsp MCT oil
1/3 cup raw honey, melted
4 tsp hydrolysed collagen (I used Gelatin Health Soft Skin)
1 tsp pure vanilla extract
½ tsp celtic sea salt
1 tsp ground cinnamon
¼ tsp ground cardamom

what to do:
Place all dry ingredients in a large bowl and stir well.

Melt the coconut oil and honey together on a low heat until combined.

Drain the sesame seeds.

Add the remaining ingredients, including the combined coconut oil and honey and drained seeds, and stir gently with a spoon.

Press mixture firmly into a large dish or baking pan.

Cover and freeze for at least 1-2 hours. Cut into squares and serve.

notes

Best when stored in the freezer and eaten when chilled.
I sometimes mix it up and use white sesame seeds and black tahini. The black tahini gives an even sweeter flavour to the bar.
Instead of sesame seeds, you could also use a mix of activated seeds and nuts.
Raw honey has amazing healing benefits but if you are limiting your sugar intake, other sweeteners, such as rice malt syrup will work just as well.
