Choc chip banana flour ghee cookies

Banana flour and coconut ghee! A choc chip cookie rich in flavour AND rich in nutrients.

Banana flour is a great source of natural resistant starch, a fermentable fibre that acts as a prebiotic for the digestive system. It is also very high in essential vitamins and minerals, in particular potassium,magnesium, zinc and vitamin E. We also use coconut ghee which is a vegan alternative to dairy based ghee. Generally used for frying and roasting, coconut ghee has a rich buttery flavour. You still get the benefits of coconut oil with a deeper flavour that makes it great for biscuits and cakes.

Makes approximately 14-16

 what you need

1 cup banana flour
1/2 cup almond flour
1/2 tsp salt
2 tsp baking powder
½ cup cacao
¼ tsp cinnamon
1/3 cup honey
2 eggs
1/2 cup coconut ghee  (We recommend Nuilife Coconut Ghee)
2 tsp vanilla essence
1/2 cup organic dark chocolate chips
to serve, Macadamia nut butter or your other favourite nut butter

 what to do

Preheat oven to 180°C or 160°C fan forced.  Line a baking tray with baking paper.

Mix all dry ingredients together in a mixing bowl.

Combine all wet ingredients (excluding the chocolate chips) in a separate mixing bowl.  Once combined, add to the dry ingredients and mix well.

Fold through the dark chocolate chips.

Place tablespoon sized balls onto the lined baking tray. The dough may be slightly sticky so wet your hands and spoon beforehand.

Bake for 12-15 minutes. Once cooked, remove from oven. Allow to cool on tray for 10 mins before moving to a wire rack.

Once completely cooled, you can serve in their own or for a little more decadence and your favourite nut butter (macadamia nut butter tastes amazing with chocolate) to make a choc chip cookie sandwich. I used about 2 teaspoons for each sandwich but you can use as much or as little as you like!

notes

To replace the coconut ghee, you can use an extra virgin cold pressed coconut oil or a dairy based ghee.

For a vegan option, replace the honey with your sweetener of choice and replace the dark chocolate chips with small chunks of your favourite raw chocolate. I think raw mint chocolate chunks would be a great addition!
