roasted sweet potato, broccoli and goats cheese gluten free pizza

“using Gluten Free Food Co Quick Mix Pizza Base, a healthy alternative for the whole family”

Ingredients are for 2 x 30cm pizza base.

what you need

1 large sweet potato, sliced 1cm pieces
1 medium head broccoli, cut into small florets
1 red onion, thickly sliced
4 -5 mushrooms, sliced
60g goats chevre cheese (you can use more if desired)
2 tbsp Hemp pesto (recipe here)
2 tbsp Tomato Paste (I used Global Organics Tomato Paste)
2 tsp oregano
2 tsp hemp seeds

 what to do:

Preheat oven to 180 °C.

Spread sweet potato, broccoli and red onion evenly on baking trays. Cook for 20 minutes or until just soft and lightly charred at the edges. Do not overcook as there will be further cooking once placed on the pizza.

Evenly spread the tomato paste on the pre-made pizza bases. Sprinkle the oregano on top of the paste.

Top the pizza with the sweet potato, broccoli, red onion and mushrooms. Then strategically place the goats cheese across the two pizzas.

Place back in the oven and cook for 10-15 minutes or until the top of the pizza is lightly browned and the edges look nice and crisp.

Once cooked, top the pizzas with dollops of hemp pesto (use as much as you like) and a sprinkle of hemp seeds. Serve immediately and enjoy!!

notes

Make the Gluten Free Food Co Quick Mix Pizza Base as per instructions. For a crunchy base, ensure you pre-bake it before topping the pizza. It can make 8 x 22cm bases. I instead made 4 larger bases and used this topping for 2 of those bases.
